Cheese by post? Who heard of such a daft thing?! Cheese is alive...it must breathe....to wrap it in plastic and ship it is the act of a philistine!! Nobody who loves cheese and sells it would do this to it! It will arrive sweaty and slack.....the taste and texture will be compromised. For the foreign stuff you'd be better off toddling along to your local Deli and see what they have....find a Mom & Pop operation and they will probably let you taste and try before you buy....and tell you all about the cheese into the bargain....online buying is NOT always best!! Buying cheese or wine in this way is barmy!! Taste is a vital part of choosing...you CANNOT 'blind buy' & expect a good result....support your local Deli I say!!

I've become so enamored with this flavorful cheese this week that I have added more to my shopping list to keep on hand for a variety of uses. Manchego is a rich sheep's milk cheese produced in the La Mancha region of Spain. It is primarily used as a grating cheese, but I've read that it can work just as well as a melting cheese. For those who have not had this excellent cheese, it may be helpful to compare Stravecchio Oro del Tempo, Grana Padano, which is relatively obscure outside of Italy, with cheeses that English-speakers may have had the good fortune to try. It is a hard aged cheese, in my opinion more like Regiano Parmesan than anything made in North America. It has sort of crystalline fracture lines in it, and is quite tangy, which makes it offset fruit nicely, but as it is hard as well as tangy, it does beautifully in place of more ordinary grating cheeses such as Romano or Parmesan. Some very old cheddars are a little bit like that, but North American cheddars are never this hard and grainy. It has bursting hard crystals of lactic acid and milk sugars.

To really enjoy this cheese you should have a Girolle. This is a board with a rotating slicer blade that you turn. This results in beautiful flower petal shaped slices that are ideal for getting the most from the cheese. Search for "Girolle" as they are not in stock at the moment I can't offer a number. There is a combination available from another vendor "B0000DK4XT" As to the cheese it is really special. At first scent it is a bit intimidating but let it come up to temperature and you will have something wonderful. Most likely you will only use half of this in one setting unless you have a lot of company. Terrific setup for parties.

After 34 years in Europe, we were looking for a good source of Raclette cheese back here in the U.S. Since we don't live near big cities, we went with the igourmet product. It was great, came quickly in a nifty styrofoam container and we enjoyed it. However, the shipping cost is quite high. We had an option to buy in bulk, but Raclette doesn't freeze well and you can only eat this so many times in a season.

Its about time Spanish products started getting their due.. The most famous (rightly so) Spanish cheese, Manchego, is world class, and is really tough to beat. Try some with some fig cake, or some quince paste, or drizzled with olive oil garnished with rosemary.. Serve with a fino sherry, manzanilla, or any number of red wines (depending on age of cheese), and you are guaranteed a winning combination.. Sliced, melted over a great burger, with a roasted red pepper and a hearty glass of earthy zinfandel = heavenly joy.. Cube and marinate in Spanish olive oil is also a treat... I have had no problems with iGourmet so far, so I can't comment on their customer service - all of my orders have been shipped quickly (1-3 business days), without issue.
