Kitchen Confidential is a must read for anyone who has ever set foot in the backrooms of a restaurant. Bourdain captures the environment with all its stresses, off-colored language and cooking pride. Kitchen Confidential reads similar to a feature on VH1's Behind the Music as Bourdain battles with his own demons and finds success after many years of debauchery. I have been a fan of Bourdain's No Reservation on the Travel Channel for quite awhile and now as an author. The book lead me to another Bourdain project called the Les Halles Cookbook which has inspired me to spend more time in the favorite room of my house, the kitchen. Thank you, Tony!

"Under Pressure: Cooking Sous Vide" is Thomas Keller's latest coffee table book/cookbook. While "French Laundry" showed innovative takes on classic dishes and "Bouchon" offers everyday French bistro fare,"Under Pressure" takes cooking in another direction. It's a technique known as "bain marie" among the French. It's a more sophisticated version of the "boil in the bag" technique.

The author/waiter is a highly educated college graduate who proves to be an excellent writer as well. He can take any situation or anecdote, embellish it with a little humor and turn it into a story that capture's one's attention from beginning to end.
While nothing in the book is earth-shattering, I will say that much of it is eye-opening. Besides, there are many stories that most of us can relate to on a daily basis, especially those who work with the public: dealing with nasty customers; working for a screwy boss; and observing human nature at its best and it's worst.

The Zagat guide is as important as a map in New York City, where there is a restaurant in almost every storefront or building (and it includes a very nice map as well although I could not get it to tear out). The information is very accurate and up to date, although I did find there were some errors in credit card acceptance. The food quality and price ratings are very helpful. I usually look for around a 20 in food and a less than 40 in food, and figure that is a pretty good combination for me. Some of the great features are the organization by neighborhood, most popular, and highest ratings. I find the most popular more helpful than the highest ratings, because i cannot afford the highest ratings every night.

Fast Food Nation is a fine "Social Thriller" bringing you to the edge of your seat right from beginning till the end.
If "Erin Brockowich" is for P&G, then "Fast Food Nation" is for MacDonald's.Author has not spared a single stone unturned to make this book an "encyclopedia" of fast food "facts"( read evils)

Going right into the production of raw materials,beef, french fries, potato farms, cattle feeds, workers apathy, production plants overseas, rules,legalities, food poisoning etc, Author has managed to bring the complete loop or lifecycle into this 300 pages "encyclopedia".Author has to commended for the way he has presented the topic to be an interesting reading and not a dull thesis.

Have you ever wanted to shadow a chef for a day? Have you ever wondered exactly what goes on in the kitchen and what they keep on hand? Ever wonder in painful detail how a fine dinning restaurant is run?

If you said yes to at least two of these questions, you will like this book. If you failed to answer yes to any of them, then move on to a different book.

As a normal read for a food network/Hell's Kitchen fan, this was painfully boring and dull. I was looking for juicy stories about the staff, the customers and cooking. Instead I got what seems to be a record of how one restaurant is run--in such detail it seems like an employee manual or time capsule in case everyone quit and it needed to be re-created from scratch.

I first bought a copy of this cookbook for my mom, then one for myself, and now one for a friend. It's a great intro to "american" cooking and entertaining. My best find in this book: the curried butternut squash soup (which I'd never had before), and I love the sesame ham-and-cheese bites! Only drawback in this book: the amounts are meant for entertaining (10 lbs of meat for chili!) and need to be significantly scaled back when cooking for two...

I bought this book in the eighties and found it helpful on some road trips. This newer version has little more. Some of these restaurants are no longer good and there are far better ones in an area. The concept is good, but I don't think the Sterns go back to these places to reevaluate and quite frankly I don't think they have added much that's new.

This is much more than Taber's account of the actual historic French/California taste-off. It is really an indepth look at the beginnings of the post-Prohibition California wine industry, especially the quality winemakers who were trying to do much more than provide good jug wines. There are wonderful family histories, anecdotes, analysis of wine marketing, and much more.

If you have only seen the film "Bottle Shock," you should read this book to see what really happened. It's a fun film but more fictional than factual.
